A blend of raw banana called nendran and Jaggery, Sharkara Varatti is enriched with the traditional and spicy flavors of ginger, cardamom and cumin powder, along with the sautéing in coconut oil. To witness the fondness of sharkara varatti , one should take a tour to South India during the ten day festive season of Onam when every Keralite kitchen is beguiled in the preparation of this luscious snack.
In brief, the peeled bite size raw banana is brewed until golden in coconut oil; followed by the thorough amalgamation in the rightly consistent jaggery incorporated with ginger/cardamom spices. The dried snack can be stored in an air tight container with a purpose to preserve them for long in case you can control your taste buds to guzzle them tout de suite.
